Questions
Why brown sugar and baking soda for the boil instead of malt?
Diastatic malt powder is what we use in the wheat-based Complete Kit, but malt is wheat-derived and contains gluten. The combination of brown sugar (for sweetness and crust browning) plus baking soda (for the alkaline boil water that gives bagels their bite) produces a comparable finish without any wheat in the recipe.
Is this kit safe for celiacs?
The dough mix and boil additive are gluten-free by ingredient. However, this kit is produced in a shared home kitchen where wheat-based products are also made. If you have celiac disease or a severe gluten allergy, please understand we cannot guarantee zero cross-contact, even with careful handling. Honestly, does the texture compare to wheat bagels?
Closer than most GF baked goods, not identical. Psyllium does most of the heavy lifting that gluten does in a wheat bagel. It gives the dough structure and chew. The crust comes out about 95 percent of where the wheat version is. The interior is slightly denser. We've worked through several recipe iterations to land on this. It's the closest we've gotten without compromising on the upside-down-cedar method.
How long does it take to ship?
Orders ship in 3–5 business days from the workshop in Colorado Springs. You'll get a tracking number by email when your package leaves. US shipping only at this time.
What if I want to return something?
You have 30 days from delivery to request a return. The product needs to come back unused, undamaged and with all original pieces. Return shipping is the buyer's responsibility unless the item arrived defective. Send a note via the Contact page to start a return.
How do I take care of my products?
Bagel boards: soak in water before each use, hand-wash with mild soap, air-dry standing on edge, and rub on a thin coat of food-safe mineral oil every few months. Bagel stands: wipe with a damp cloth, do not soak. The finish is food-touch-safe but not dishwasher-safe. Product-specific care details live on each product page.
Where are these made?
Every board, kit, and stand is built one at a time in a one-person workshop in Colorado Springs, Colorado. Materials are sourced from US suppliers, with special attention on selecting high quality, food grade materials only.
Do you take custom orders?
Yes. Customer looking to place a large order, looking for specific materials or specific dimensions should send a note via the Contact page and we'll see what's possible.
Can I use just the GF dough mix in another recipe?
The mix is pre-portioned for the included recipe card. You could use it in another GF bread recipe, but you'd need to adjust hydration and proportions. The mix isn't optimized for sandwich bread or rolls. It's blended for the boil-then-bake bagel method.
