Questions
Why does the recipe call for diastatic malt powder?
It's the difference between bread shaped like a bagel and an actual bagel. Diastatic malt is added to the water you boil the bagels in. It gives the crust its shine, the chew, and a faint sweetness. Most home recipes ignore it because it's hard to find at the grocery store. We pack a measured portion in every kit, so the recipe works the first time.
Should I get the Classic or Signature boards in my kit?
Classic boards have stapled burlap covers. They're the working tool. Signature boards have snap-removable covers, which means you can replace the burlap as it wears instead of replacing the whole board. If you bake a few times a year, Classic is fine. If you plan to bake every week, the Signature pays for itself within a year or so.
How long do the dry ingredients last?
The bagel mix and the seasoning are good for about 12 months from the kit shipping date if kept sealed and dry. The diastatic malt powder is similar. Store everything in a cool, dry pantry.
Can I substitute the dough mix for my own flour?
You can. The diastatic malt and the technique still apply with any high-gluten bread flour. But the dough mix in this kit is pre-portioned for the recipe card, so substituting changes the proportions. If you want to use your own flour, treat the kit as "boards + tools + diastatic malt + seasoning" and use a recipe scaled for your flour.
How long does it take to ship?
Orders ship in 3–5 business days from the workshop in Colorado Springs. You'll get a tracking number by email when your package leaves. US shipping only at this time.
What if I want to return something?
You have 30 days from delivery to request a return. The product needs to come back unused, undamaged and with all original pieces. Return shipping is the buyer's responsibility unless the item arrived defective. Send a note via the Contact page to start a return.
How do I take care of my products?
Bagel boards: soak in water before each use, hand-wash with mild soap, air-dry standing on edge, and rub on a thin coat of food-safe mineral oil every few months. Bagel stands: wipe with a damp cloth, do not soak. The finish is food-touch-safe but not dishwasher-safe. Product-specific care details live on each product page.
Where are these made?
Every board, kit, and stand is built one at a time in a one-person workshop in Colorado Springs, Colorado. Materials are sourced from US suppliers, with special attention on selecting high quality, food grade materials only.
